Job Description

Title: Head Cook

Location: The Center at Red Oak

Under the supervision of the Program director, and in consultation with the Food Service director, direct and oversee the day to day food program and the completion of all DFTA documentation.


  • Comply with all applicable state and city regulations regarding food storage, food preparation, and maintenance of kitchen, kitchen equipment, food storage room and dining area.
  • Maintain up-to-date of food handlers certificate from the City of New York.
  • Maintain sanitary, organized conditions in all food preparation, food serving, and food storage areas


  • Work with DFTA nutritious to plan appetizing meals and prepare menus in advance according to applicable regulations and individual special diets.
  • Maintain an up-to-date file of temperature logs as mandated by DFTA.
  • Meet with the building director on a regular basis to discuss food service program.
  • Maintain updated DFTA food log to be completed daily.


  • Ordering of all food and work with vendors and suppliers.
  • Maintain monthly food budget including the food for the take-home weekend meal program. Maintain sufficient inventory of food, utensils and supplies to assure adequate stock exists for preparation of each meal during the duration of the project.


  • Lead in the preparation of meals and arranging of appetizing and complete presentation of standard meal portions.


  • Minimum of 1-year experience in a high volume kitchen(s) serving 40 persons or more.
  • Up to date food handler’s certification from the City of New York.
  • Good organizational skills.
  • Must be able to work in a fast paste environment
  • At least 18 years of age.
  • Emotionally, mentally, and physically able to perform job responsibilities.
  • Able to speak, read, and write English (as required by DSS
  • regulation 487.9.13)
